Savory Waffle: Cheddar & Scallion Waffle with Mustard Syrup

After an impromptu waffle iron buy last night, we decided to make waffles this morning! This savory waffle is delicious with the mustard syrup! And the best part is, it is so easy to make!

Cheddar & Scallion Waffles with Mustard Syrup

Ingredients (Makes 4-6 waffles, or 1 Belgium waffle)
Waffles:
1 cup flour
1/8 cup sugar
1 tsp baking powder
1/4 tsp salt
1/8 tsp baking soda
1 egg
3/4 cup of milk
3/4 of 1 stick of butter, melted and cooled
1/2 cup of shredded cheddar (I used monterey jack)
3-4 tablespoons of scallions, chopped

Mustard Syrup:
1/2 cup syrup
1/8 cup dijon mustard
1/2 tsp salt

Directions
Waffles:
1. Whisk the flour, sugar, baking powder, salt and baking soda in a large bowl.
2. Whisk the milk, the cooled melted butter and 1 egg in a separate bowl until combined; pour into the flour mixture and stir until just combined. (A few small lumps are fine.)
3. Preheat a waffle iron; lightly brush with vegetable oil, then fill with batter three-quarters full and cook until the waffles are golden and crisp.

Mustard Syrup:
1. Combine the syrup, mustard and salt in a saucepan over medium heat.
2. When the mixture begins to bubble, turn the heat to low. Stir until well combined.
3. Pour into a serving container and serve immediately.

Pour the syrup over the waffles to serve and enjoy!

Beer Cheese Dip

This easy dip takes 5 minutes to make and is jam-packed with flavor! The longer you let the ingredients marinate, the bolder the flavor, which is why I prefer to let mine stay in the refrigerator over night.

Ingredients

  • 2 (8 ounce) packages of softened cream cheese
  • 1 package of Dry mix –  Ranch Dressing (like Hidden Valley)
  •  1/2 -3/4 can of beer  (A lager, or full bodied beer, as opposed to a light beer will give you a better flavor)
  • 2 cups shredded cheddar cheese
  • Pretzels for dipping

Directions

  1. Mix cream cheese, dressing, and beer until you reach your desired creamy consistency.
  2. Then mix in 1/2 cup of cheese, leaving the remaining cheese to sprinkle on top.
  3. Refrigerated overnight to let the flavors marinade or at least 3 hours before.
  4. Serve with pretzels.

Quinoa and Spinach Un-Mac n’ Cheese

This recipe takes my favorite mac and cheese to a whole new level. Instead of pasta, it uses quinoa which adds protein and cuts back on the carbs. Adding the spinach adds a little vegetable to the dish making it that much more healthy! This recipe has been added to my list of favorite comfort foods!

Ingredients

  • 2 cups Quinoa
  • 3 tablespoons Butter
  • 3 tablespoons Flour
  • 1 1/2 cups Milk
  • Freshly Grated Nutmeg
  • 1/4 teaspoon Salt
  • 1 Shallot (minced)
  • 8 ounces Shredded Cheddar Cheese
  • 1/2 cup Freshly Grated Parmesan Cheese (divided)
  • 1 bag Fresh Baby Spinach
  • 4 tablespoons Butter (melted)
  • 3/4 cup Panko Breadcrumbs

Directions

Preheat oven to 350°F. Prepare a casserole dish with non-stick cooking spray.

Cook the quinoa according to the package instructions.

In a sauce pan over medium heat, add 3 tablespoons of butter and the shallot. Cook until the shallot is slightly soft then whisk in flour. Continue to whisk until a paste forms and becomes light golden in color.

Whisk in the milk and increase the heat to medium-high. Bring to a boil while whisking. Stir in nutmeg and salt along with the cheddar cheese. When the cheese sauce is smooth, remove from heat.

In a large bowl, mix cooked quinoa, cheese sauce, spinach and half of the parmesan cheese. Transfer mixture to the casserole dish. Top with the remaining parmesan.

In a small bowl, stir together the melted butter and panko breadcrumbs. Sprinkle over the casserole and bake for 20 minutes.

Remove from oven and allow to cool slightly before serving.

This is my new favorite comfort food. It’s healthy, it’s cheesy, but most importantly its easy and delicious! The original recipe called for farro, but I couldn’t find that in my grocery store so I substituted it for quinoa, which is great and adds protein to this simple dish. Call it an adult mac and cheese if you must!

Ingredients

1 cup uncooked quinoa, with 2 cups water
2 cups (8 ounces) grated extra-sharp Cheddar
2 cups (8 ounces) grated mozzarella
1 cup whole milk
3 tablespoons herbes de Provence
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
4 (about 5 ounces) 1/2-inch thick slices multi-grain or whole-grain bread, preferably 1 day old, torn into 1/2-inch pieces
Extra-virgin olive oil, for drizzling
Butter, for baking dish

Directions

Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Butter a 9 by 13 by 2-inch glass baking dish. Set aside.

Quinoa: In a pot, bring the quinoa, water and salt to a boil over medium-high heat. Reduce the heat, cover the pot, and simmer until the quinoa is cooked, about 10-15 minutes. Fluff once the water has evaporated.

Filling: In a large bowl mix together the cheeses, milk, herbes de Provence, salt, and pepper. Add the cooked quinoa and stir until coated. Pour the mixture into the prepared baking dish.

Topping: Arrange the bread pieces on top of the farro mixture and drizzle liberally with olive oil.

Bake for 15 minutes until the topping is golden. Cool for 5 minutes and serve.

Cheddar and Scallion Garlic Bread

I bought this Scallion Garlic butter at whole foods the other day and I had a whole stick of it. I have been using it with eggs, using it to cook meat and fish but still had quite a bit left. I saw that Giada made this cheddar and scallion garlic bread and I thought, “I have all those ingredients in one stick of butter!” So this recipe was super simple for me because most of the ingredients were already marinading together, all I had to do was add the cheddar cheese!

Below are the ingredients in case you don’t already have a stick a butter that has those ingredients in it. Even if you don’t already have a pre-made butter, this recipe is really easy and super yummy! I will never eat garlic bread the same way again!

Cheddar and Scallion Garlic Bread

Ingredients

8 ounces sharp cheddar cheese, shredded or coarsely grated
6 ounces butter, at room temperature
4 scallions, finely chopped
2 cloves garlic, chopped
Kosher salt and freshly ground black pepper
1  loaf ciabatta bread, cut in half horizontally

Directions

Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F.

In a food processor, combine the cheese and butter. Process until the mixture is smooth. Add the scallions and pulse until combined. Season with salt and pepper, to taste. Spread the cheese mixture on the cut sides of the bread. Sprinkle a little bit of shredded cheddar cheese on top of the spread for extra cheesiness! Place on a baking sheet and bake for 10 to 12 minutes until golden.

Using a serrated knife, cut the bread into 1-inch thick slices and serve.
